EASTER BRUNCHDAY: HEALTHY HOLIDAY CARROT MUFFCAKES
I love everything Festive, and as I’ve mentioned before, I mourn the ending of Every. Single. Holiday.

Alas, here I am stretching the celebrations by finishing Easter’s end with a Brunch fit for a Bunny.
These MuffCakes are full of colourful carrots, and optionally Vegan to keep that inner Bunny inside of you Hip Hop Hop Happy.
Without further ado, I give you Healthy Holiday Carrot Cake MuffCakes:
(VEGAN/PALEO/KETO OPTIONS BABY)
RECIPE:
(Makes 12 MuffCakes)
1 Cup Almond Flour
1/2 Cup Coconut Flour
1 Cup Quick Oats (OR Coconut Flakes if Keto)
1 Tbsp Organic Psyllium Husk
3 Tsp Baking Powder
6 Pastured Eggs (OR 6 flax eggs if Vegan)
1/2 Cup Full Fat Coconut Milk (Or Heavy Organic Cream if not Vegan/Paleo)
3 Tbsp Organic Grass-Fed Butter/Ghee (Coconut Oil if Vegan)
1/2 Cup Organic Chopped Walnuts
1/2 Cup Organic Sultana Raisins
1/2 Tsp Cinnamon
1/2 Tsp Turmeric
1 Tsp Pure Vanilla Extract
1 Tsp Pink Himalayan Sea Salt
Stevia to Taste
1 Cup Grated Carrot
Optional Add-Ins:
1 scoop Whey Protein (I used Kaizen Cinnamon Bun Whey)
1 Tbsp Diatomaceous Earth

Directions:
Combine Dry Ingredients
Combine Wet Ingredients
Add Wet to Dry Ingredients
Add in the Carrots, Walnuts, Raisins, and Optional Add-Ins. Stir until Well Combined.
Bake at 350 Degrees For 15 min or until a toothpick comes out clean.
Optional Cream Cheese Frosting:
(BARELY OPTIONAL)
1/2 Cup Organic Grass-Fed Butter/Ghee (Coconut Oil if Vegan)
1/2 Cup Organic Grass-Fed Cream Cheese (Coconut Cream if Vegan)
1/2 Tsp Pink Himalayan Sea Salt
1 Tsp Pure Vanilla Extract
Stevia To Taste
Optional Add-Ins:
1 Scoop Kaizen Cinnamon Bun Whey Protein
1 Tbsp Coconut Milk (To thin out the Protein Powder)

Directions:
Melt ingredients together in a double boiler until warm but not fully melted, and whip until fluffy and firm!
